Can I live in the house during a repipe?
Generally yes. The work is staged so water is restored at the end of each day, and you are told in advance which days are the disruptive ones.
Who fixes the walls afterwards?
That is part of the written scope before work starts. A repipe quote that says nothing about drywall is an incomplete quote.
PEX or copper?
Both are code legal and both are used. PEX routes with fewer joints and handles hard water well. Copper is the traditional choice. You get the reasoning and the price for each rather than one option.

Does hard water make repiping more likely?

What if I have polybutylene?
Polybutylene systems fail at the fittings as a pattern, not as isolated events. If that is what is in the walls, repiping is planned work rather than a reaction, and that is the honest framing.
